Enfin! Fris\u00e9e, scarole, catalogne&nbsp;? Toutes diff\u00e9rentes, et pourtant toutes semblables \u00e0 l\u2019origine. Et qu\u2019est-ce qui rapproche l\u2019endive, le chicon belge, blanc \u00e0 liser\u00e9 jaune, du \u00abradicchio\u00bb, la Tr\u00e9vise, \u00e0 la belle couleur carmin vein\u00e9e de blanc? <br \/> Ces salades \u00e9num\u00e9r\u00e9es, et ces (presque) l\u00e9gumes, font partie de la grande famille des chicor\u00e9es. Endive et Tr\u00e9vise doivent \u00eatre \u00e9lev\u00e9es dans l\u2019obscurit\u00e9 pour acqu\u00e9rir leurs sp\u00e9cificit\u00e9s physique et gustative. Ainsi, dans sa patrie d\u2019origine, le \u00abradicchio\u00bb n\u00e9cessite une pr\u00e9paration toute artisanale, avant d\u2019\u00eatre mise sur le march\u00e9. La plante est d\u00e9terr\u00e9e, puis li\u00e9e en fagot \u00e0 des branches de saule, et ses racines sont plong\u00e9es dans l\u2019eau courante&nbsp;; ainsi, elle s\u2019attendrit et perd de son amertume. On n\u2019en conserve que le \u00abc\u0153ur\u00bb le plus blanc, serr\u00e9, d\u00e9pouill\u00e9 des plus grandes feuilles, rouges. Cette chicor\u00e9e-l\u00e0 est grill\u00e9e ou saut\u00e9e \u00e0 la po\u00eale et enrichit de son amertume d\u00e9capante le risotto. Un vrai r\u00e9gal qu\u2019il faut go\u00fbter un jour!<br \/> Ces salades, de la fris\u00e9e \u00e0 la Tr\u00e9vise, se signalent par une amertume marqu\u00e9e. \u00abMutatis, mutandis\u00bb, elles descendent de la chicor\u00e9e sauvage, \u00abicoria selvatica\u00bb, elle-m\u00eame cousine de la dent-de-lion. Plus r\u00e9centes, amen\u00e9es par les immigr\u00e9s transalpins il y a une quarantaine ans en Suisse, d\u2019autres chicor\u00e9es permettent de varier les mescluns de salades. Certaine, comme la \u00abceriolo\u00bb (en photo), appel\u00e9e aussi \u00abrosette\u00bb, est verte, en joli bouquet, comme un p\u00e9tale de rose qui s\u2019\u00e9panouit. Epaisses au toucher, ces feuilles doivent \u00eatre mang\u00e9es fra\u00eeches et croquantes. D\u2019autres, qui m\u00e9langent vert et rouge, sont de proches parentes de la Tr\u00e9vise ou de sa vari\u00e9t\u00e9 voisine, la \u00abrosa di Verona\u00bb, curieux croisement \u00e0 l\u2019\u0153il entre chou et rose. <br \/> C\u2019est fou ce que la chicor\u00e9e peut \u00eatre diverse&nbsp;! Et les Belges la consomment depuis bient\u00f4t deux si\u00e8cles de l\u2019entr\u00e9e au dessert, puisque certaines vari\u00e9t\u00e9s ont \u00e9t\u00e9 s\u00e9lectionn\u00e9s pour d\u00e9velopper des racines \u00e9paisses. Torr\u00e9fi\u00e9es, moulues et r\u00e9duites en poudre, elles donnent un succ\u00e9dan\u00e9 du caf\u00e9, sans ar\u00f4me ni caf\u00e9ine.
