Cela n\u2019enl\u00e8ve rien aux m\u00e9rites de deux jeunes Vaudois, amoureux du Canada, Alain Bersier et David Huggler, qui y ont emprunt\u00e9 la recette de leur \u00abcidre liquoreux de pommes\u00bb. <br \/> Si, l\u00e0-bas, le pr\u00e9cieux liquide, l\u00e9g\u00e9rement acidul\u00e9, mais d\u2019une bonne sucrosit\u00e9, et tr\u00e8s expressif de son fruit, a recours \u00e0 la rudesse du climat, avec des pommes ramass\u00e9es dans les frimas de d\u00e9cembre et un jus laiss\u00e9 \u00e0 l\u2019ext\u00e9rieur par moins 20 degr\u00e9s, le proc\u00e9d\u00e9 \u00abvaudois\u00bb est plus technologique. A Vinzel, l\u2019hiver est moins rude qu\u2019\u00e0 Montr\u00e9al. Le jus des pommes est donc congel\u00e9 dans un frigo.&nbsp;Si cette \u00abcryog\u00e9nisation\u00bb n\u2019est pas comparable avec un enrichissement naturel du raisin, elle n\u2019alt\u00e8re pas le go\u00fbt du suc des pommes Golden, Gala, Idared et Maigold. Foi de d\u00e9gustateur des S\u00e9lections mondiales de Montr\u00e9al, o\u00f9 j\u2019ai d\u00e9couvert mon premier \u00abcidre de glace\u00bb, il y a six ans&nbsp;! L\u2019eau restant glace, il suffit de presser l\u2019\u00ab\u00e9pais\u00bb du jus. Celui-ci se transforme, gr\u00e2ce \u00e0 des levures, en cidre liquoreux, \u00abcomme un vin doux\u00bb, pr\u00e9cise Alain Bersier.<br \/> Le Vaudois conna\u00eet bien sa mati\u00e8re&nbsp;: il pr\u00e9pare une ma\u00eetrise de caviste, apr\u00e8s avoir suivi les cours de viti-\u0153no \u00e0 Changins. Surtout, il a travaill\u00e9 dans un vignoble acadien, en Nouvelle-Ecosse, o\u00f9 il s\u2019est familiaris\u00e9 avec l\u2019\u00abice wine\u00bb et le cidre de glace. A c\u00f4t\u00e9 de la version de base, bien fruit\u00e9e, le cidre moelleux vieilli un an en barrique d\u2019acacia a plus de complexit\u00e9\u2026 Avec un foie gras ou un fromage bleu, le \u00abcidre liquoreux\u00bb fait merveille.
