Joli nom pour une racine du pays brun\u00e2tre et tarabiscot\u00e9e, qui lui viendrait d\u2019Indiens du Br\u00e9sil qui n\u2019en ont pourtant jamais cultiv\u00e9 ! <br \/> Si ce l\u00e9gume d\u2019hiver, qu\u2019on ne trouve que de novembre \u00e0 fin avril, se dit \u00abJerusalem artichoke\u00bb en anglais, les Qu\u00e9b\u00e9cois en revendiquent la paternit\u00e9. Ils sont alors tri\u00e9s et lav\u00e9s et seuls \u00ables plus jolis\u00bb sont propos\u00e9s au double du prix du kilo de carottes (soit 6 francs). <br \/> Potage, gratin, en simple l\u00e9gume cuit \u00e0 l\u2019eau ou pass\u00e9 au beurre : le topinambour n\u2019exige pas de talent de grand chef. La mara\u00eech\u00e8re les aime aussi crus, r\u00e2p\u00e9s sur une salade. Parce qu\u2019ils contiennent de l\u2019inuline, un glucide que l\u2019intestin ne peut pas dig\u00e9rer, les topinambours ont quelques effets collat\u00e9raux.
