Ce comptoir-l\u00e0, digne du souk de Marrakech, n\u2019est pas sur les grands boulevards, mais au rez d\u2019une petite maison de la banlieue lausannoise. <br \/> Ses 70 \u00e9pices, Pascal Commissaire ne les exhibe pas souvent, pour une raison l\u00e9gitime : \u00abIl faut enfermer les \u00e9pices et \u00e9viter de les \u00e9venter.\u00bb Il les met donc en bocaux, \u00e0 l\u2019abri de la lumi\u00e8re dans son \u00abatelier\u00bb, puis en sachet ou en \u00e9prouvette, o\u00f9 cristallisent des gousses de vanille. Voire carr\u00e9ment sous verre, dans des cadres, r\u00e9miniscence d\u2019un autre m\u00e9tier \u2014 doreur \u2014 qu\u2019il a exerc\u00e9 entre deux voyages au long cours. <br \/> A Tahiti, un ami lui procure de la vanille locale de Madame Jeanne. Il lui exp\u00e9die, \u00e0 raison de quatre kilos \u00e0 la fois, de grosses gousses, \u00abplus douces, plus parfum\u00e9es, plus subtiles\u00bb que celles de Madagascar. Le colis \u00e9tait parti depuis trois semaines de Raiatea, mais pas encore arriv\u00e9 au Mont-sur-Lausanne : \u00abJ\u2019esp\u00e8re qu\u2019il sera l\u00e0 pour Orbe, la semaine prochaine\u2026\u00bb <br \/> Mais le pr\u00e9pos\u00e9 aux \u00e9pices a d\u2019autres tr\u00e9sors dans sa caverne d\u2019Ali Baba. Comme cette f\u00e8ve tonka, \u00e0 l\u2019ar\u00f4me de coumarine, m\u00e9lange d\u2019amande am\u00e8re et de vanille. Cueillie verte, d\u00e9gorg\u00e9e au rhum, puis s\u00e9ch\u00e9e au soleil, la graine noire sud-am\u00e9ricaine, partag\u00e9e en deux, aromatise des desserts, telle une cr\u00e8me anglaise, ou des plats de poisson, m\u00eal\u00e9e au lait de coco. L\u2019\u00e9picier passionn\u00e9 vous en dira davantage : \u00abJ\u2019essaie de conna\u00eetre mes produits \u00e0 fond. Je les go\u00fbte tous.
