Curieux fruit, genre tomate, \u00e0 la peau mince et facilement endommag\u00e9e, tandis que la pulpe ne supporte pas d\u2019\u00eatre peu mature, sous peine d\u2019astringence r\u00e9dhibitoire. Il faut donc t\u00e2ter le kaki avant de l\u2019acheter\u2026<br \/> Le cachi \u00e9voque immanquablement l\u2019Italie du Nord \u2014 m\u00eame si certains, vanill\u00e9s, viennent aussi d\u2019Espagne. Essayez cette glace crema-cachi, qui aura \u00e0 la fois le go\u00fbt inimitable de l\u2019authentique glace italienne et la texture du fruit, selon la recette du chef Riccardo Aiaschini.&nbsp; Prenez 1 litre de lait, 400 g. de cr\u00e8me fleurette 35%, 600 g. de sucre, 2 jaunes d\u2019\u0153ufs et 1 kg de kakis. Retirez la pulpe du fruit, filtrez cette masse. Faites bouillir le lait et la cr\u00e8me, et r\u00e9servez. Dans un bol, battez les jaunes d\u2019\u0153uf avec le sucre. Puis incorporez la cr\u00e8me, refroidie, le sucre et l\u2019\u0153uf et la masse de fruit. Turbinez 35 minutes, jusqu\u2019\u00e0 consistance lisse, dans une sorbeti\u00e8re. Gardez au froid et servez \u00e0 votre convenance. <br \/> Ne r\u00e9v\u00e9lez surtout pas que c\u2019est une glace au kaki&nbsp;: surprenez vos amis! Effet garanti.
