Mais la meilleure de toutes, il faut aller la chercher au pied du col du Jaun, \u00e0 Bellegarde. Officieux \u00abroi de la moutarde\u00bb, \u00e0 force d\u2019adoubements, Gilbert Mooser fait figure de titulaire incontest\u00e9. <br \/> Il a remport\u00e9 le premier concours organis\u00e9 \u00e0 Estavayer-le-Lac par la \u00abConfr\u00e9rie des ma\u00eetres moustardiers\u00bb. L\u2019an pass\u00e9, il empochait un troph\u00e9e des boulangers au Salon des Go\u00fbts &amp; Terroirs de Bulle. Fin ao\u00fbt, il se classait encore troisi\u00e8me&nbsp;\u00abpro\u00bb du quatri\u00e8me concours staviacois, mais deuxi\u00e8me, selon le public. Au combin\u00e9, le boulanger de Bellegarde, 67 ans, dont les bisc\u00f4mes de la Saint-Nicolas sont fameux, s\u2019impose. Et dans la dur\u00e9e aussi&nbsp;: il y a quarante ans qu\u2019il cuit ses moutardes.<br \/> Comme les Fribourgeois ne sont pas \u00e9gaux devant la B\u00e9nichon, \u00e9gren\u00e9e tout au long du calendrier, Gilbert Mooser pr\u00e9pare de mai \u00e0 novembre cet avatar de \u00abconfiture\u00bb qu\u2019on \u00e9tale sur une tranche de cuchaule (un pain moelleux, un soup\u00e7on safran\u00e9, typique de la f\u00eate paysanne). L\u2019an pass\u00e9, il en a pr\u00e9par\u00e9 850 litres, \u00e0 raison de dix litres par \u00abcuite\u00bb. Pas question, pourtant, de trouver des revendeurs&nbsp;: \u00abJe ne suis pas une fabrique&nbsp;!\u00bb. Il faut y ajouter des graines de moutarde, des \u00e9toiles d\u2019anis, du b\u00e2ton de cannelle, une pluie fine de farine et une tomb\u00e9e de vin blanc. Laisser mijoter les \u00e9pices avec du sucre candy, puis ajouter ce sirop au \u00abvin cuit\u00bb allong\u00e9 de farine, et chauffer \u00e0 nouveau.
