Non pas un fromage de vache, commun en Suisse depuis plusieurs ann\u00e9es, mais de \u00abbuffala\u00bb, produit artisanalement depuis l\u2019\u00e9t\u00e9 pass\u00e9. <br \/> L\u2019aventure du troupeau de bufflonnes des fr\u00e8res Georges-Eric et Daniel St\u00e4hli, au domaine du Bois de Croix, \u00e0 Travers, remonte \u00e0 sept ans. Quelques p\u00e9rip\u00e9ties plus tard, les premi\u00e8res b\u00eates, n\u00e9es du c\u00f4t\u00e9 de Malpensa, l\u2019a\u00e9roport de Milan, se pr\u00e9lassent au vert neuch\u00e2telois. Le troupeau compte aujourd\u2019hui deux cents t\u00eates. Une trentaine donnent chacune quelque huit litres de lait par jour, en deux traites. L\u2019an prochain, elles seront une centaine\u2026 Car ces bovid\u00e9s, originaires d\u2019Asie, mais acclimat\u00e9s en Italie, mettent plus longtemps que nos bonnes vaches pour produire un lait \u00abplus cr\u00e9meux, plus go\u00fbteux, plus long en bouche\u00bb, qui ressemble \u00ab\u00e0 de la cr\u00e8me \u00e0 caf\u00e9\u00bb, explique Daniel St\u00e4hli.<br \/> L\u2019\u00e9leveur s\u2019est improvis\u00e9 fromager&nbsp;: mozarella, tommes, fromages mi-durs et yoghourts. En \u00e9t\u00e9, c\u2019est le premier du quatuor qui a le plus de succ\u00e8s. A partir de lait pasteuris\u00e9 sur place, la masse, obtenue gr\u00e2ce \u00e0 des ferments lyophilis\u00e9s import\u00e9s d\u2019Italie, est plong\u00e9e dans de l\u2019eau chaude, puis p\u00e9trie. \u00abLe caill\u00e9 devient une p\u00e2te, qui se m\u00eale et s\u2019entrem\u00eale durant le filage. J\u2019ai eu tout de suite un bon \u00ab&nbsp;feeling\u00bb!\u00bb, se f\u00e9licite ce Neuch\u00e2telois de 38 ans. Sa mozarella, unique en Suisse, au go\u00fbt prononc\u00e9, soulign\u00e9 par l\u2019acidit\u00e9 propre au lait de \u00abbuffala\u00bb, garde l\u2019avantage de la proximit\u00e9. Vendue en boule, dans de l\u2019eau sal\u00e9e, elle peut tenir trois semaines, mais son apog\u00e9e, quant au go\u00fbt et \u00e0 la texture ferme et \u00e9lastique, se situe entre quatre et dix jours.
