A la morte saison, elles sont bien s\u00e8ches et croquantes. Mais elles peuvent aussi s\u2019utiliser vertes&nbsp;! C\u2019est le secret du go\u00fbt inimitable de ce \u00abvin de noix\u00bb qu\u2019une paysanne de Bex (VD), Yvonne Croset, produit au compte-gouttes depuis une dizaine d\u2019ann\u00e9es. Un peu plus de cent litres par hiver&#8230; Un \u00e9lixir \u00e0 d\u00e9guster en toutes saisons&nbsp;: \u00abLe 2005 est une merveille. Normal, cette ann\u00e9e, c\u2019\u00e9tait l\u2019ann\u00e9e des noix&nbsp;! Il y en a eu tout plein et mon vin en a bien le go\u00fbt\u00bb, s\u2019extasie la productrice. Cette mixture originale fait merveille sur un foie gras, des fromages forts (\u00e0 p\u00e2te dure ou bleus), ou, en cuisine, comme d\u00e9gla\u00e7age du foie de veau. A moins de le servir en ap\u00e9ritif, bien frais\u2026 <br \/> La recette est simple et connue ailleurs, par exemple en Provence. Yvonne Croset se procure du vin rouge chez Pierre-Alain Meylan, un des meilleurs vignerons-encaveurs vaudois, \u00e0 Ollon. Puis, trois mois durant, dans un tonnelet, elle fait mac\u00e9rer des noix vertes de son verger. Ensuite, la d\u00e9coction est mut\u00e9e (\u00e0 15\u00b0) par ajout de marc, rectifi\u00e9e avec un peu de sucre, si n\u00e9cessaire, puis filtr\u00e9e.<br \/> \u00abQuand c\u2019est bon, les gens reviennent \u00e0 la ferme&nbsp;! Je fais toujours d\u00e9guster quelque chose chez moi&#8230; Tenez, j\u2019ai aussi des griottes, au kirsch maison distill\u00e9 \u00e0 Monthey, et des cerises bigarreau au marc.\u00bb En attendant, pour P\u00e2ques, de l\u2019huile de noix, qui auront s\u00e9ch\u00e9 tout l\u2019hiver. Le vin de noix, lui, a enthousiasm\u00e9 Annick Le Biavent, de Globus \u00e0 Lausanne. Mais Yvonne Croset en a gard\u00e9 pour les clients de passage. Il y est moins cher qu\u2019en ville.
