Curieusement, le persil resplendissait de chlorophylle. \u00abIl pousse sous serre jusqu\u2019en avril\u00bb, m\u2019a expliqu\u00e9 ma mara\u00eech\u00e8re pr\u00e9f\u00e9r\u00e9e.<br \/> Le persil&nbsp;? C\u2019est ce pr\u00e9texte, parfois jauni dans ses frisures (pouais\u2026), mari\u00e9 \u00e0 un seizi\u00e8me de tomate non \u00e9pluch\u00e9e (re-pouais&nbsp;!), qui ajoute, au bistrot, de la couleur \u00e0 des plats insipides. M\u00eame le \u00abLarousse gastronomique\u00bb justifie cet effet d\u00e9coratif d\u2019un aromate, au demeurant meilleur plat que fris\u00e9.<br \/> Surtout, comme le proclame un site Internet belge, cette plante verte tout sauf d\u00e9corative, fait partie des \u00abalicaments\u00bb. Avec 28 kcal par 100 g., et, pour le m\u00eame poids, 800 mg de potassium, 200 mg de calcium, 70 mg de phosphore, 40 mg de magn\u00e9sium et 5,5 mg de fer, sans compter les vitamines C, A et E, c\u2019est une bombe&nbsp;! A condition de ne pas le consommer en quantit\u00e9 infinit\u00e9simale, mais en potage ou en pur\u00e9e. <br \/> Pr\u00e9cis\u00e9ment, avant que mes papilles rendent gr\u00e2ce, j\u2019ai d\u00e9gust\u00e9 une excellente \u00abpur\u00e9e de persil\u00bb pr\u00e9par\u00e9e au Mirador du Mont-P\u00e8lerin par le jeune chef allemand Peter Knogl. Sa recette, la voici. Rincer, puis effeuiller le persil plat&nbsp;; le faire cuire dans l\u2019eau bouillante pendant 11 minutes&nbsp;; le rafra\u00eechir dans de l\u2019eau avec des gla\u00e7ons (pour conserver la couleur verte&nbsp;!), puis le presser pour en \u00e9liminer l\u2019eau&nbsp;; le mixer jusqu\u2019\u00e0 l\u2019obtention d\u2019une p\u00e2te&nbsp;; saler, poivrer et d\u00e9layer avec un peu de cr\u00e8me&nbsp;; enfin, le passer au tamis pour obtenir une pur\u00e9e lisse et fine. Quand on sait que le persil contient 83% d\u2019eau, on comprend qu\u2019il en faut un bon kilo pour rassasier (et requinquer) quatre convives.
