Et revoil\u00e0 la nostalgie des g\u00e2teaux de grand-papa\u2026 Le probl\u00e8me de cette polygon\u00e9e connue des Chinois \u2014 soit il y a cinq mill\u00e9naires \u2014 est qu\u2019elle rend l\u2019eau qu\u2019elle contient, soit 95%. Bonjour, les tartes aux p\u00e2tes mollachues ou noircies&nbsp;! Et puis, la rhubarbe est terriblement acide et am\u00e8re. Quand on croque une tige crue, on a l\u2019impression que les gencives se r\u00e9tractent\u2026 Il suffirait de la blanchir deux minutes \u00e0 l\u2019eau bouillante pour diminuer cette astringence.<br \/> Pour l\u2019amadouer, on associe aussi la tige \u00e0 un \u00abappareil\u00bb, sorte de flan, que les Vaudois nomment \u00abgu\u00e9lon\u00bb. Le tout mis en pratique donne la recette qui suit. Son truc&nbsp;? Plut\u00f4t que laisser la rhubarbe ramollir la p\u00e2te, pr\u00e9parez une compote rapide, dont vous contr\u00f4lez la densit\u00e9. Vous en garnirez la p\u00e2te bris\u00e9e, faites maison ou achet\u00e9e. Rien de plus facile: il suffit d\u2019\u00e9plucher six tiges, sauf si elles sont jeunes (on peut alors conserver leur fine peau rouge qui irisera le g\u00e2teau\u2026) et de les couper en tron\u00e7on de deux centim\u00e8tres. Mettez dans une casserole la rhubarbe avec la moiti\u00e9 de son poids en sucre, arrosez d\u2019un verre d\u2019eau, et laissez cuire vingt minutes. Ensuite, garnir la p\u00e2te \u00e9tal\u00e9e sur une plaque, la saupoudrer de sucre et la cuire \u00e0 four mod\u00e9r\u00e9 pendant 25 minutes. Pr\u00e9parez l\u2019appareil (m\u00e9langez 50 g de beurre, du sucre et deux \u0153ufs, avec de la poudre de cannelle ou de gingembre) et r\u00e9partissez sur la surface de la tarte. Remettez au four pour dorer la surface.<br \/> La tarte n\u2019est pas la seule fa\u00e7on d\u2019utiliser la v\u00e9n\u00e9rable tige, seule consommable car les feuilles contiennent de l\u2019acide oxalique, tr\u00e8s toxique. Les Anglais l\u2019ont red\u00e9couverte et ne manquent pas d\u2019imagination, l\u2019appr\u00eatant en confiture, en glace, en salade, en cake, en muffin ou en chutney. \u00abThe rhubarb compendium\u00bb (www.rhubarbinfo.com \u2014 in english, of course&nbsp;!) permet de s\u2019en convaincre. Et de d\u00e9couvrir aussi une quinzaine de recettes de \u00abvin de rhubarbe\u00bb, ferment\u00e9 \u00e0 domicile. Sous cette forme, je pr\u00e9f\u00e8re celle de l\u2019\u0153nologue belge Ludovic Boucard (www.vinsderoisin.be). Son breuvage, que j\u2019ai go\u00fbt\u00e9, a obtenu une m\u00e9daille d\u2019or au Concours mondial de Bruxelles 2003. Dans la cat\u00e9gorie spiritueux!
