Voil\u00e0 pourquoi le Club Prosper Montagn\u00e9, qui s&#39;intitule aussi l&#39;Acad\u00e9mie suisse du go\u00fbt, depuis un quart de si\u00e8cle, attribue son troph\u00e9e sur un rythme variable. Au seul \u00abaccueil\u00bb, la commission de s\u00e9lection a, du reste, ajout\u00e9 une notion de qualit\u00e9 culinaire. Pas \u00e9tonnant qu&#39;on retrouve parmi les r\u00e9cipiendaires une adresse aussi (re)connue que le Cerf, \u00e0 Cossonay. <br \/> <span style=\"font-weight: bold;\">Assurer les arri\u00e8res<\/span><br \/> Trois toques et 18 points au guide Gault Millau, Cl\u00e9 d&#39;or du m\u00eame guide en 1989, deux \u00e9toiles au Michelin: la belle maison des Crisci collectionne les distinctions. Cette fois, l&#39;honneur ne va pas au chef, mais \u00e0 son \u00e9pouse. Il y a peu de destins aussi \u00e9troitement li\u00e9s. \u00abStrasbourgeoise, j&#39;\u00e9tais venue gagner un peu d&#39;argent pour financer mon \u00e9cole d&#39;infirmi\u00e8re, aux Paccots, dans le restaurant du papa Crisci. Et j&#39;ai rencontr\u00e9 son fils. Je savais que je ferais ce m\u00e9tier ou que je perdrais Carlo. C&#39;\u00e9tait clair au d\u00e9part\u00bb, raconte Christine Crisci, qui peut para\u00eetre r\u00e9serv\u00e9e. \u00abMais je ne suis pas timide! J&#39;aime les gens. Quand nous sommes arriv\u00e9s au Cerf, \u00e0 Cossonay, en 1982, j&#39;avais 25 ans. La salle me faisait peur. Elle m&#39;impressionnait. J&#39;ai d\u00fb prendre sur moi pour l&#39;affronter. Les clients m&#39;ont aid\u00e9. Carlo, c&#39;est la cuisine. Et moi, tous les arri\u00e8res: le vin, la comptabilit\u00e9, la gestion du personnel.\u00bb <br \/> Propri\u00e9taires depuis janvier de cette ann\u00e9e de ces murs historiques, au c\u0153ur de la petite cit\u00e9 vaudoise, les Crisci r\u00eavent parfois d&#39;autres horizons. \u00abJ&#39;aimerais mettre le Cerf sur des roulettes et le d\u00e9placer. De ne pas surplomber le L\u00e9man me manque: ah si nous avions du d\u00e9gagement, une belle terrasse et&#8230; des places de parc. Mais on ne visite rien: on a peur de se faire envie!\u00bb, sourit Mme Crisci, m\u00e8re de trois enfants, dont l&#39;a\u00een\u00e9e, Malya, \u00e0 24 ans, est assistante de direction dans un h\u00f4tel veveysan.<br \/> <span style=\"font-weight: bold;\">Un nouveau pr\u00e9sident<\/span><br \/> A l&#39;occasion de la remise de ce prix, le banquier priv\u00e9 vaudois Pierre Henchoz a annonc\u00e9 qu&#39;apr\u00e8s six ans de pr\u00e9sidence, il remet son mandat.
