L\u2019\u00e9diteur Pierre-Marcel Favre l\u2019a \u00e9pingl\u00e9 dans sa collection de \u00abbeaux livres\u00bb.<\/span><br \/> <span style=\"font-style: italic;\">Pierre Thomas<\/span><br \/> Mardi, espi\u00e8gle derri\u00e8re ses lunettes tendance, le chef a pr\u00e9f\u00e9r\u00e9, aux mondanit\u00e9s, le refuge de sa cuisine. Tandis qu\u2019une brochette d\u2019invit\u00e9s f\u00eataient dans la salle moyen\u00e2geuse du restaurant la sortie du tout premier livre de Carlo Crisci, il s\u2019est consacr\u00e9 \u00e0 son m\u00e9tier. Dans cette anecdote, c\u2019est tout lui, le surdou\u00e9 autodidacte des cuisines, fils d\u2019un chef italien retourn\u00e9 \u00e0 ses oliviers de Campanie. Angelo, 73 ans, fournit du reste \u00e0 son fils une huile d\u00e9licieuse\u2026 <br \/> Comme il faut un titre \u00e0 tout livre de cuisine, le chef l\u2019a appel\u00e9 \u00abEquilibre\u00bb. Mais lui-m\u00eame est plut\u00f4t un funambule, toujours \u00e0 la pointe de ce qu\u2019il nomme \u00abla cuisine \u00e9volutive\u00bb, que \u00abla ma\u00eetrise des temp\u00e9ratures a r\u00e9volutionn\u00e9e\u00bb ce dernier quart de si\u00e8cle. <br \/> <span style=\"font-weight: bold;\">Un travail d\u2019\u00e9quipe<\/span><br \/> Ce premier livre fut \u00abun travail d\u2019\u00e9quipe\u00bb entre le chef, le journaliste radio Daniel Fazan, le photographe Pierre-Michel Delessert et le graphiste Oscar Ribes. Celui-ci, par une mise en page tr\u00e8s color\u00e9e et dynamique, signe l\u2019ouvrage le plus abouti de la collection entam\u00e9e par Pierre-Marcel Favre, il y a six ans. Carlo Crisci est le septi\u00e8me Romand \u00e0 y figurer, en attendant, l\u2019an prochain, Denis Martin, de Vevey. <br \/> G\u00e9rard Rabaey, fort d\u2019un gros succ\u00e8s de librairie piaffe de signer son second ouvrage, tandis que l\u2019\u00e9diteur courtise le Valaisan Didier de Courten, pas press\u00e9, semble-t-il. Car faire un livre, c\u2019est se soumettre \u00e0 une grosse pression&nbsp;: \u00abId\u00e9alement, si je devais refaire l\u2019exercice, je pr\u00e9parerais mon bouquin avant d\u2019en parler \u00e0 un \u00e9diteur. Il y aurait moins de stress\u00bb, explique Crisci, connu pour son perfectionnisme. <br \/> A Cossonay, ce 18 sur 20 au GaultMillau (d\u00e8s 1993) et deux macarons Michelin (d\u00e8s 1998), travaille avec une brigade de 18 personnes, dont quatre cuisiniers. Il vient de promouvoir second C\u00e9dric Rey, qui remplace Luc Parmentier.
