Et voil\u00e0 que le guide rouge lui en cr\u00e8ve un&#8230; Plus que la deuxi\u00e8me \u00e9toile redonn\u00e9e \u00e0 <a href=\"http:\/\/www.thomasvino.ch\/articles.php?lng=fr&amp;pg=387\">Didier de Courten<\/a>, qui l\u2019avait perdue entre Corin et Sierre, c\u2019est celle retir\u00e9e \u00e0 Bernard Ravet, \u00e0 Vufflens-le-Ch\u00e2teau (VD), qui constitue l\u2019\u00e9v\u00e9nement du guide Michelin Suisse dont la quatorzi\u00e8me \u00e9dition est en librairie d\u00e8s le jeudi 23 novembre 2006.<\/span><br \/> <span style=\"font-style: italic;\">Pierre Thomas<\/span><br \/> Au plus haut niveau, ce mouvement est le seul, car Michelin confirme ses trois \u00e9toiles \u00e0 Philippe Rochat \u00e0 Crissier et \u00e0 G\u00e9rard Rabaey \u00e0 Brent-sur-Montreux. Si le guide <span style=\"font-style: italic;\">GaultMillau Suisse 2007<\/span> avait vu dans Bernard Ravet le \u00abma\u00eetre de l\u2019enchanteur Ermitage\u00bb qui d\u00e9roule \u00e0 table \u00abun parcours royal de mets d\u2019anthologie\u00bb, le Michelin, lui, le ram\u00e8ne au niveau de Roland Pierroz, \u00e0 Verbier, gratifi\u00e9 \u00e9galement d\u2019un 19 sur 20 au GaultMillau, mais qui n\u2019est jamais parvenu \u00e0 d\u00e9crocher un deuxi\u00e8me macaron. <br \/> <span style=\"font-weight: bold;\">L\u2019Onde \u00e9toil\u00e9e<\/span><br \/> Des trois restaurants promus \u00e0 une \u00e9toile, cette ann\u00e9e, un seul est en Suisse romande, l\u2019<a href=\"http:\/\/www.thomasvino.ch\/articles.php?lng=fr&amp;pg=478\">Auberge de l\u2019Onde \u00e0 Saint-Saphorin (VD)<\/a>, r\u00e9nov\u00e9e \u00e0 grands frais et rouverte ce printemps, o\u00f9 officie G\u00e9rard Cavuscens, ancien bras droit de Fr\u00e9dy Girardet. Le Jaan du Montreux-Palace, que le jeune chef David Tarnowski vient de quitter, et l\u2019Hostellerie de la Vend\u00e9e, au Petit-Lancy (GE), perdent leur \u00e9toile. Par contre, <a href=\"http:\/\/www.thomasvino.ch\/articles.php?lng=fr&amp;pg=779\">Marcel Th\u00fcrler, \u00e0 Bulle-La Tour-de-Tr\u00eame<\/a> garde son macaron \u2014 il n\u2019appara\u00eet plus dans le guide concurrent \u2014 parmi les 70 tables de ce rang (pour 13 deux \u00e9toiles). <br \/> Sur les 2&#39;045 adresses d\u2019h\u00f4tels et de restaurants r\u00e9parties sur 578 pages, ces grandes tables ne repr\u00e9sentent toutefois que 5%. Au total, 133 \u00e9tablissements sont nouveaux et 147 ont \u00e9t\u00e9 radi\u00e9s. Le guide a fait le m\u00e9nage dans les \u00abbibs gourmands\u00bb, restaurants \u00e0 repas \u00e0 prix mod\u00e9r\u00e9s&nbsp;(16 nouveaux pour 21 ray\u00e9s de la liste) et les \u00abbibs h\u00f4tels\u00bb, h\u00f4tels \u00e0 moins de 180 francs la nuit\u00e9e avec petit d\u00e9jeuner (9 nouveaux et 13 supprim\u00e9s). <br \/> <span style=\"font-weight: bold;\">Fribourg et Valais au tournus<\/span><br \/> Si le guide souligne que \u00abchaque ann\u00e9e, toutes les informations pratiques, les classements et distinctions sont revus et mis \u00e0 jour\u00bb, les visites sont \u00abanonymes et r\u00e9guli\u00e8res\u00bb, donc pas annuelles. Du mouvement des \u00abbibs\u00bb, on retiendra qu\u2019en Suisse romande, Fribourg et le Valais ont \u00e9t\u00e9 syst\u00e9matiquement visit\u00e9s cette ann\u00e9e.
