Tout faux!<\/span><br \/>Si le \u00abnon filtr\u00e9\u00bb sort des caves le troisi\u00e8me mercredi du mois de janvier, c\u2019est pour \u00e9viter une course \u00e0 la cuv\u00e9e la plus pr\u00e9coce sur le march\u00e9. Et non pour induire une date de p\u00e9remption. Ce blanc primesautier n\u2019a rien d\u2019un vin primeur&nbsp;: sa vinification, deuxi\u00e8me fermentation malolactique comprise, est achev\u00e9e. Et pour v\u00e9rifier qu\u2019une bouteille contient bel et bien un vin brut de d\u00e9cuvage, il faut, d\u2019abord, renverser le flacon \u2014 avant de l\u2019ouvrir&nbsp;! \u2014 de telle sorte qu\u2019un l\u00e9ger trouble se manifeste ensuite dans le verre. Ce sont de fines lies, qu\u2019il vaut la peine de remettre en suspension avant d\u00e9gustation.<br \/>Mais qu\u2019on se le dise, le chasselas non filtr\u00e9, sp\u00e9cialit\u00e9 neuch\u00e2teloise sans concurrence en Suisse romande, est habilit\u00e9 \u00e0 mieux vieillir que le chasselas tout court. Premier parti, dernier \u00e9teint\u2026 Car quand elles se d\u00e9sagr\u00e9gent, les lies \u00abnourrissent\u00bb le vin. Le champagne, stock\u00e9 dans les caves des cray\u00e8res, et d\u00e9gorg\u00e9 juste avant mise en bouteille, avait permis de mesurer le potentiel de ce processus, nomm\u00e9 \u00abautolyse\u00bb. Le m\u00eame effet est recherch\u00e9 par le \u00abb\u00e2tonnage\u00bb du chardonnay \u00e0 la bourguignonne&nbsp;: on remue le liquide et les lies dans la barrique, r\u00e9guli\u00e8rement, et le vin acquiert ainsi du gras.<br \/>&nbsp;De Lavaux au Valais, de plus en plus de vignerons gardent leur chasselas sur lies plusieurs mois et en retardent sa mise en bouteille. Mais ce qui fait l\u2019originalit\u00e9 du non filtr\u00e9 neuch\u00e2telois (\u00e0 peine plus de 130&#39;000 litres), c\u2019est que les lies restent en suspension dans la bouteille. L\u2019effet est ind\u00e9niable, confirme Jean-Paul Ruedin, \u00e0 Cressier&nbsp;: \u00abLes lies sont une protection contre l\u2019oxydation\u00bb. \u00abLes go\u00fbts exotiques ou de grapefruit, perceptibles juste apr\u00e8s la mise en bouteille, disparaissent rapidement. Ses caract\u00e8res \u00e9voluent et un \u00abnon filtr\u00e9\u00bb devient plus complexe qu\u2019un chasselas normal\u00bb, opine l\u2019\u0153nologue Yves Dothaux, de Cormondr\u00e8che.<br \/>Le voile, poussi\u00e8re d\u2019\u00e9ternit\u00e9, n\u2019exclut pas des diff\u00e9rences d\u2019un producteur \u00e0 l\u2019autre, du plus tendre au plus vif, qui, co\u00efncidence dans notre tierc\u00e9, court au pied du Jura, du sud-ouest au nord-est. Pour s\u2019en convaincre, il suffit de faire la tourn\u00e9e des caves neuch\u00e2teloises, ouvertes le vendredi et le samedi 4 et 5 mai, avec la f\u00eate du \u00abvin nouveau\u00bb qui joue les prolongations \u00e0 Cressier, le dimanche 6 mai.
