Tout l&#39;inverse!<\/span><br \/>La meilleure mondeuse du monde? Elle est sicilienne! C\u00e9page confidentiel de la Savoie, la mondeuse est sans doute la \u00abbitturica allobrogica\u00bb que les Romains d\u00e9couvrirent en remontant la vall\u00e9e du Rh\u00f4ne \u2014 alors qu\u2019ailleurs, ils apport\u00e8rent avec eux des ceps de vigne\u2026 Et ce ne sont pas les Romains qui l\u2019ont amen\u00e9e sur la plus grande \u00eele de la M\u00e9diterran\u00e9e, mais un professeur d\u2019agriculture de l\u2019Universit\u00e9 de Milan. A la demande des fr\u00e8res Cambria, du Domaine Cottanera, il a conseill\u00e9 d\u2019en planter, il y a dix ans, cinq hectares sur les contreforts arri\u00e8re de l\u2019Etna. Surprise&nbsp;: la mondeuse, dite noire, se marie parfaitement \u00e0 ce terroir, fait de d\u00e9bris de lave. Apr\u00e8s \u00e9levage d\u2019un an dans des barriques de ch\u00eane fran\u00e7ais, d\u2019un rouge profond, puissant, vanill\u00e9, velout\u00e9, le breuvage fait honneur aux \u00abrimes d\u2019amour\u00bb du Tasse, reproduites sur l\u2019\u00e9tiquette. Une r\u00e9ussite qui a m\u00eame m\u00e9dus\u00e9 un \u0153nologue savoyard\u2026<br \/>Car, jusqu\u2019ici, la mondeuse se cantonnait \u00e0 sa r\u00e9gion d\u2019origine. Elle y subit les assauts du phyllox\u00e9ra, puis faillit dispara\u00eetre quand les vignerons, un \u00e0 un, s\u2019en all\u00e8rent gagner leur vie dans les usines. Depuis vingt ans, elle redresse la t\u00eate et est redevenue \u00e0 la mode. En voil\u00e0 une juv\u00e9nile, \u00e0 la robe et aux ar\u00f4mes de violette, \u00e0 la structure moyenne, qui vient des marges du Bugey, non loin de Gen\u00e8ve. Encore brute de d\u00e9coffrage sous son bouchon synth\u00e9tique, on la boirait sur un reblochon, pour profiter de la fra\u00eecheur de son fruit\u00e9.<br \/>Face \u00e0 la Savoie, sur la rive suisse du L\u00e9man, la mondeuse fut chass\u00e9e par le\u2026 chasselas. Des vignerons vaudois sont all\u00e9s en Savoie rechercher des plants. Depuis dix ans, Jean-Fran\u00e7ois Cossy y met tout le soin n\u00e9cessaire, de la vigne, o\u00f9, tardive, elle peut \u00eatre trop productive, donc \u00e2pre et dure, \u00e0 la cave, o\u00f9 il l\u2019\u00e9l\u00e8ve un an en f\u00fbt de cinq cents litres, pour l\u2019amadouer. Avec \u00e0 peine 20&#39;000 m2 de mondeuse&nbsp;\u2014 0,05% de la surface viticole vaudoise, soit dix fois moins qu\u2019en Savoie \u2014, c\u2019est une raret\u00e9. Celle-ci a \u00e9t\u00e9 jug\u00e9e digne, en 2005, de la bouteille de la Charte de qualit\u00e9 de Chardonne, reconnaissable \u00e0 un soleil moul\u00e9 dans le verre.
