Inscrit au Patrimoine mondial de l\u2019UNESCO d\u00e8s le 27 juin 2007, qu\u2019est-ce qui va changer pour les vignerons de la r\u00e9gion viticole de Lavaux ? <\/span>
Le lendemain de l\u2019annonce tant attendue, un vigneron-encaveur de Cully, Fr\u00e9d\u00e9ric Blondel, de la Cave de la Cour (4 hectares), pr\u00e9sentait un \u00abpackaging\u00bb r\u00e9solument moderne de chasselas \u00abvieilles vignes\u00bb d\u2019Epesses, 2006 \u00e9lev\u00e9 sur lies. Sous coffret ajour\u00e9 noir, les \u00e9tiquettes des six bouteille alignent chacune une lettre du mot Lavaux.

Rappel pourtant : l\u2019utilisation \u00e0 des fins commerciales de l\u2019inscription au patrimoine mondial est prohib\u00e9e. La Jurade de Saint-Emilion, adoub\u00e9e depuis quinze ans, planche depuis longtemps sur son propre label pour qu'il puisse jouer \u00e0 la fois sur la qualit\u00e9 du vin et l\u2019exception du paysage. Le comit\u00e9 vaudois de candidature avait vertement tanc\u00e9 deux vignerons de Saint-Saphorin qui, l\u2019an pass\u00e9, avaient appos\u00e9 sur leurs flacons un tampon (en forme de cachet postal) signalant, \u00abLavaux, un patrimoine mondial\u00bb. En revanche, la gr\u00eale f\u00e9d\u00e9ratrice du 18 juillet 2005 et la d\u00e9marche de certains gros vignerons-encaveurs, tels les fr\u00e8res Dizerens, de Lutry, remettent au go\u00fbt du jour l\u2019appellation d\u2019origine, contr\u00f4l\u00e9e mais g\u00e9n\u00e9rique, Lavaux.
Le bon moment pour revoir les AOC ?<\/span>
Peut-\u00eatre que ces initiatives conduiront-elles \u00e0 un peu plus de rigueur dans les AOC locales. Celles-ci encouragent la pratique g\u00e9n\u00e9reuse du 51 \u2013 49 (une majorit\u00e9 de vin d\u2019une commune peut \u00eatre assembl\u00e9e \u00e0 du vin d\u2019une voisine et porter ainsi le nom de l\u2019AOC la plus connue). Et, tout \u00abgrand cru\u00bb l\u00e9galis\u00e9 qu\u2019ils soient, le Calamin et le D\u00e9zaley tol\u00e8rent le coupage \u00e0 hauteur de 15%. Lavaux au pinacle pourrait donc faire avancer les choses : qui peut le plus, peut le moins.
